Oatmeal-raisin muffins

Measure Ingredient
1 cup Rolled oats
1 cup Buttermilk
¾ cup White flour
½ teaspoon Baking powder
¼ teaspoon Salt
¾ teaspoon Baking soda
½ teaspoon Cinnamon
2 Eggs, beaten lightly
⅓ cup Light brown sugar
6 tablespoons Butter, melted
⅓ cup Raisins

MORNING FOOD

Cafe Beaujolais "...the most widely distributed recipe...prepared for the Pacific Gas and Electric Co newsletter..." Combine oats and buttermilk. Let stand 30 mins. Sift flour, powder, salt, soda, and cinnamon. Stir eggs into buttermilk mixture, then add sugar, butter and flour mixture. Stir until just combined. Batter will be lumpy. Fold in the raisins. Spoon into muffin cups, filling ⅔ full. Bake 400 F, 15-20 mins.
