New orleans pecan pie

Ingredients

3Egg yolks
1cupSour cream
1cupSugar
4tablespoonsCornstarch
¼teaspoonLemon rind (grated or lemon
_extract)
pinchSalt
1Pie shell (9\" baked, cooled)
2Egg whites
1cupBrown sugar
1cupPecans (chopped)

Directions

Mix egg yolks, sour cream, sugar, cornstarch, lemon rind, and salt.

Cook in top of double boiler until thick. Pour into pie shell. Beat egg whites. Add brown sugar, slowly, stir in pecans. Spread over filling. Bake until lightly browned. Cool; refrigerate for several hours.
