Mattie ball's hush puppies

Yield: 36 servings

Measure Ingredient
2 cups White Cornmeal
\N \N (Stone-Ground)
½ cup Flour
3 teaspoons Baking Powder
1 teaspoon Salt
1 teaspoon Sugar
½ medium Onion -- grated
2 \N Egg Yolks
2 tablespoons Butter Or Shortening --
\N \N Melted
½ cup Milk
\N \N Vegetable Oil -- for
\N \N Deep-frying

Combine the dry ingredients with the onion. Mix in the eggs, shortening, and enough milk to make a spongy dough. Mix only briefly.

Drop by teaspoons into deep hot fat, as for French fries.

Serve with fish, or with toothpicks as an hors d'oeuvre at your next cocktail party.
