Mango coriander salsa

1teaspoonFreshly chopped red chilli
3tablespoonsLime juice
1largePot coriander; leaves only; chopped
1teaspoonTamarind
2teaspoonsCaster sugar
1dashFish sauce
½teaspoonSesame oil
1tablespoonWhite wine vinegar
25gramsGinger; finely chopped
; (1oz)
Salt and freshly ground black pepper

Directions

Combine all the ingredients in a large bowl. If you require a finer salsa it can be blended in a food processor or with a hand blender.

Refrigerate until required.
