Mango salsa

Yield: 2 servings

Measure Ingredient
1 Ripe mango
¼ cup Red onion -- finely diced
1 Serrano chile -- minced
4 tablespoons Lime juice
⅓ cup Cilantro -- coarsely
2 tablespoons Fresh basil -- coarsely

Remove peel from mango with vegetable peeler. Sice around pit to remove flesh with thin, sharp knife. Slice flesh into ¼" thick strips, and then crosswise into ¼" dice. Place chopped mango in medium bowl and add onion, chile, lime juice, cilantro, basil and pepper to taste. Combine and adjust seasoning to taste.
