Lemon ice #2

Yield: 4 Servings

Measure Ingredient
2 cups Water
1 cup Sugar; to taste (i've also used part honey)
½ cup Lemon juice (can also use other citrus fruits; grapefruit is especially good)
1 teaspoon Grated lemon rind

From the booklet that accompanied my Supremer Ice Creamer from NordicWare.

In a medium saucepan, dissolve sugar (and honey) in water. Bring to a boil and boil 3 minutes without stirring. Cool completely. Mix in lemon juice and rind. Pour into ice cream machine and follow directions for ice cream.
