Kir champagne punch

Yield: 30 Servings

Measure Ingredient
2 packs (10-oz) frozen raspberries; thawed
1 Bottle (32-oz) club soda; chilled
1 cup CrŠme de Cassis; chilled
3 Bottles (750 ml) champagne; chilled

Place one package of raspberries in a blender. Process until smooth.

Strain. Pour raspberry puree into punch bowl with club soda and cassis.

Stir gently. Break up remaining package of raspberries and add to punch bowl. Pour slowly, resting champagne bottles on the edge of punch bowl.

Stir gently with an up and down motion. Serve at once. Yield: 30 (4-oz) servings.
