Jeannie's bran bread

Measure Ingredient
1 \N Egg
1⅔ cup Buttermilk
½ cup Honey Or Molasses
2 cups Coarse Bran
2 cups Unbleached White Or
\N \N Whole-Wheat Flour
2 teaspoons Baking Powder
1 teaspoon Salt
1 teaspoon Baking Soda
½ cup Seedless Raisins Or
\N \N Chopped Dates -- optional

Preheat oven to 350 F. In a large bowl beat egg until light. Add buttermilk and honey or molasses. Mix dry ingredients and add to egg mixture blending well. Add raisins or dates (if you want them) and pour batter into a greased 9½ X 5 ½-inch loaf pan or 12 muffin cups. Bake for 50 to 60 mins, or until the edges pull away from the sides of the pan and the center feels firm to the touch.

Yield: 1 loaf or 12 large muffins.
