Italian chicken salad

Yield: 6 Servings

Measure Ingredient
1 Whole chicken, boiled
1 cup Onions, coarsely chopped
2 tablespoons Wine vinegar
1 teaspoon Oregano
½ cup Black olives, pitted, crush
1 cup Celery, coarsley chopped
½ cup Stuffed olives, sliced
4 tablespoons Olive oil
1 teaspoon Sugar
Salt/pepper

Strain chicken. Reserve chicken stock for another use. Debone and remove skin from chicken. Shred the meat. Saute onions, and celery in olive oil for a short time. Add chicken, mix well with all other ingredients until heated. Serve cold or hot.
