Indian blue cornbread

Measure Ingredient
\N \N Equipment: Frying pan
1 small Onion; minced
1 cup Blue; white or yellow
\N \N ; cornmeal
1 teaspoon Salt
1 cup Milk
½ cup Cubed cheese; up to 1, up to
1 cup Pork cracking or 1/2 cup crumbled; cooked bacon
2 tablespoons Lard or bacon fat
1 cup Unbleached flour
1 tablespoon Baking powder; 2 beaten eggs

1 Saute the onion with the lard in a small heavy 8" frying pan. Mix together the meal, flour, salt and baking powder in a bowl.

2 Add the onion and the rest of the ingredients and pour the mixture into a hot frying pan. Bake in an oven at 450f for 20-25 minutes. Cut into wedges and serve.
