Special cornbread

Yield: 8 servings

Measure Ingredient
1 cup Cornmeal
¼ cup All purpose flour
2 teaspoons Baking powder
¼ teaspoon Sugar
¼ teaspoon Baking soda
1 teaspoon Salt
14½ ounce Whole tomatoes, undrained
1 Medium onion, chopped
1 Egg, beaten
3 tablespoons Shortening, melted

Combine dry ingredients; add tomatoes, onion, eggs and shortening, mixing well. Be sure to chop tomatoes before adding. Heat iron skillet in 400 degree oven until very hot, pour in the batter, and bake at 400 for 30 minutes or until brown.
