Hot water corn meal muffins

2 | cups | Corn meal |
4 | teaspoons | Baking powder |
2 | cups | Boiling water |
1 | cup | Sweet milk |
1 | teaspoon | Melted butter or bacon grease |
1 | teaspoon | Salt |
2 | Eggs |
Directions
Sift corn meal & salt together & scald with the boiling water. Add cold milk to this mixture quickly & stir to keep the meal from lumping. Add eggs & beat well. Add baking powder when just ready to put in oven. Add butter last. Pour into well-greased muffin tins which have been heated in oven until almost smoking. Bake at 475 until well browned. Makes 16 large muffins.
