Honey-mustard garlic dressing

2Heads roasted garlic
2tablespoonsDijon mustard 2 tbsp mild honey
3tablespoonsCider vinegar
¼cupApple juice, unsweetened
¼teaspoonSalt
Black pepper to taste

Directions

Squeeze the garlic puree from the skins into a blender. Add remaining ingredients and puree until smooth and creamy. Taste for seasoning.

Covered tightly and refrigerated this dressing should keep 4 days.
