Hominy corn bread

| 1 | tablespoon | Melted shortening |
| 2 | Eggs, well beaten | |
| ½ | cup | Corn-meal |
| ½ | teaspoon | Salt |
| 1 | teaspoon | Baking powder |
| 1 | cup | Milk |
Directions
Combine hominy, shortening, eggs, and milk. Add corn-meal, salt, and baking powder. Let stand 5 minutes. Add 1 tablespoon more of milk if desirable. Pour into well-oiled pan and bake in hot oven (425ø F) 35 minutes or until a rich golden brown. 6 servings. Florence Taft Eaton, Concord, MA.
