High altitude zucchinni bread

Yield: 12 Servings

Measure Ingredient
1 cup Sugar; divided
2 teaspoons Cinnamon
2 \N Eggs
½ cup Vegetable oil
½ cup Yogurt
1 teaspoon Vanilla
1 cup Grated zucchini
1¾ cup All-purpose flour
1 teaspoon Baking soda
1 teaspoon Salt

Grease loaf pans. Dust with mixture of 2 tsp. of sugar and cinnamon. Beat together eggs, remaining sugar, oil, yogurt, and vanilla. Stir in remaining ingredients and mix well. Cook in 350 deg. oven for 60 - 70 minutes or until it passes the clean toothpick test. Let stand 10 minutes before removing from pan.
