Bread, zucchini

Yield: 2 Servings

Measure Ingredient
1½ cup Sugar
¾ cup Brown sugar
3 cups Flour
1¼ teaspoon Baking soda
1 teaspoon Soda
1 teaspoon Cinnamon
1 teaspoon Salt
3 \N Whole eggs -- well beaten
1 cup Oil
1¼ teaspoon Vanilla
2 cups Zucchini -- grated

With electric mixer, combine first seven ingredients. Then add eggs, oil, vannilla, and zucchini. Mix well.

Divide mixture into 2 greased loaf pans and bake at 325 degrees for approx.

1 hour or until toothpick inserted at center comes out clean.

Cool on rack. Can be frozen if required.
