Herbed mini meat loaves

Yield: 6 Servings

Measure Ingredient
1 pounds Ground beef, lean
1 cup Bread crumbs, soft
1 each Egg
1 each Garlic clove; minced
¼ cup Parsley; chopped
½ teaspoon Or‚gano, dried
½ teaspoon Basil, dried
¼ teaspoon Pepper, black
8 ounces Tomato sauce

Use half of the tomato sauce and add all the other ingredients. Mix well, and form into six balls. Place the balls in a microwave-safe muffin pan. Micro-cook at 70% (MEDIUM-HIGH) for 11 to 13 minutes, rotating the pan every four minutes. Drizzle with the remaining tomato sauce. Let stand for five to ten minutes before serving.

Serve with mashed potatoes, carrots and spinach.
