Herbed meat loaf`

Yield: 4 servings

Measure Ingredient
2 pounds Ground Beef, Extra Lean
2 Eggs
1 cup Bread Crumbs -- fine dry
1 tablespoon Parsley -- chopped
¼ cup Chives -- chopped
2 tablespoons Fresh Basil Or 1 Tbsp Dried
1 Clove Garlic -- crushed
¼ cup Green Pepper -- chopped
¼ cup Celery -- chopped
1½ teaspoon Salt
½ teaspoon Black Pepper
3 Strips Bacon

Combine all the ingredients except the bacon and place in a meat-loaf pan. Cover with the bacon strips and bake 1½ hrs in a 350 F oven.

Serve 4-6.
