Herbed grilled catfish

Yield: 4 Servings

Measure Ingredient
1⅓ teaspoon Paprika
½ teaspoon Garlic powder
½ teaspoon Salt
½ teaspoon Black pepper
½ teaspoon Dried thyme
½ teaspoon Dried oregano
⅛ teaspoon Ground red pepper
1 pounds Catfish fillets
\N \N Vegetable cooking spray
\N \N Oregano
\N \N Thyme

Combine first 7 ngredients. Sprinkle mixture evenly on both sides of fillets. Place fillets in a grilling basket coated with cooking spray.

Coat grill rack with cooking spray; place on grill over medium-hot coals (350 to 400F). Place basket on rack; grill, covered, 4 minutes on each side or until fish flakes easily when tested with a fork. Tranfer to a serving platter. If desired, garnish with fresh oregano and thyme.
