Hearty spam breakfast skillet

½cupChopped onion
¼mediumGreen bell pepper, cut into 1\" thin strips
¼mediumRed or yellow bell pepper, cut into 1\" thin strips
2teaspoonsOil
1canSPAM Luncheon Meat, cut into julienne strips (12 oz)
1canFrozen fat-free egg product, thawed, OR
4Eggs
¼teaspoonDried basil
teaspoonSalt
teaspoonPepper
6dropsHot pepper sauce
¼cupShredded Cheddar cheese

Directions

In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly. Add SPAM; cook and stir 5 minutes. In small bowl, combine egg product, basil, salt, pepper, and hot pepper sauce; blend well. Pour over mixture in skillet. Cover. Cook over medium-low heat 8-12 minutes or until set.

Sprinkle with cheese; remove from heat.
