Harvest rice (usarice)

Yield: 6 servings

Measure Ingredient
1 tablespoon Vegetable oil
1 cup Julienned carrots
1 cup Sliced green onions
2 cups Chopped apples; cored and unpeeled
3 cups Cooked brown rice
½ cup Seeded raisins
1 tablespoon Sesame seeds
½ teaspoon Salt

Directions: Heat oil in large skillet over medium-high heat. Cook and stir carrots 3 to 5 minutes until tender-crisp. Add onions and apples; cook 3 to 5 minutes. Stir in rice, raisings, sesame seeds and salt. Cook, stirring, 1 to 2 minutes or until thoroughly heated.

ALTERNATIVE: Microwave Oven Instructions Combine carrots and oil in 2-quart microproof baking dish. Cook on HIGH 2 to 3 minutes or until tender crisp.

Add onions and apples; continue cooking on HIGH 3 to 4 minutes. Stir in rice, raisins, sesame seeds and salt. Cover with wax paper and cook on HIGH 3 to 4 minutes, stirring after 2 minutes, or until thoroughly heated.

Makes 6 servings.
