20 \N | Pitted ripe black olives; (up to 24) |
1 can | (16-oz.) whole tomatoes |
1 can | (16-oz.) whole corn; drained |
1½ teaspoon | Salt |
1 cup | Milk |
2 teaspoons | Chili powder |
1 cup | Cornmeal |
2 \N | Eggs; well-beaten |
1 cup | Cheddar cheese; shredded |
Cook ground beef, pork sausage, onion and garlic until meat is nicely browned; drain if necessary. Stir in tomatoes with juice, drained corn, olives, chili powder and salt. Heat to boiling. Pour until an ungreased 9x9x2" baking dish. Mix cornmeal, milk and eggs; pour over the meat mixture. Sprinkle with Cheddar cheese. Bake at 350 degrees for 40-50 minutes or until golden brown.
