Golden broiled flounder

Ingredients

| 2 | pounds | Flounder or fish fillets; frozen or fresh |
| ⅓ | cup | Salad oil |
| 1 | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| 2 | Egg yolks; beaten | |
| 2 | tablespoons | Finely chopped onion |
| 1 | tablespoon | Parsley flakes |
| ½ | cup | Mayonnaise or salad dressing |
| 2 | Egg whites; stiffly beaten | |
Directions
Thaw fish fillets if frozen. Skin if neccessary and cut in serving-size pieces.
Combine oil, salt and pepper.
Combine egg yolks, onion, parsley and mayonnaise; fold in egg whites.
Place fish on oiled broiler pan; brush with half of oil mixture. Broil about 3" from source of heat 3 to 4 minutes. Turn carefully and brush with remaining oil mixture. Broil 3 to 4 minutes or until fish flakes easily when tested with a fork. Top fish with mayonnaise mixture and broil 5" from source of heat 1 to 3 minutes, or until golden brown. Serve immediately.
Makes 6 servings.
