Fresh nectarine salsa

Measure Ingredient
¾ pounds Nectarines
1½ teaspoon Lemon juice -- fresh
1½ teaspoon Red onion -- chopped
1½ teaspoon Fresh coriander leaves --
\N \N Chopped
¼ teaspoon Cumin
¼ teaspoon Salt -- or less
⅛ teaspoon Cayenne pepper -- or more

Note: 4 nectarines weigh about ¾ pound. Dice nectarines (leave peel on the fruit). Transfer diced fruit to a non-metal bowl.

Squeeze 1-½ teaspoons juice from 1 lemon and add with onion, coriander and cumin. Season with up to ¼ tsp. salt and a pinch of cayenne.
