French salad whole-meal sandwich

Ingredients

½cupBottled sliced roasted red peppers; drained
½Red onion; very thinly sliced
1cupSliced Roma tomatoes
2tablespoonsCapers
Salt and pepper
2tablespoonsCrumbled feta cheese
½cupLow-calorie Italian dressing
1Round artisan loaf
Halved lengthwise and scooped out
2cupsChopped romaine lettuce

Directions

In large bowl, combine peppers, onions, tomatoes, and capers. Season with salt and pepper, then add cheese and ¼ cup dressing. Toss well. Pile into loaf. Top with lettuce. Drizzle with remaining dressing. Replace top half of loaf. Wrap tightly in plastic wrap and let stand 30 minutes.

Makes 6 to 8 servings.
