French salad whole-meal sandwich

Ingredients

| ½ | cup | Bottled sliced roasted red peppers; drained |
| ½ | Red onion; very thinly sliced | |
| 1 | cup | Sliced Roma tomatoes |
| 2 | tablespoons | Capers |
| Salt and pepper | ||
| 2 | tablespoons | Crumbled feta cheese |
| ½ | cup | Low-calorie Italian dressing |
| 1 | Round artisan loaf | |
| Halved lengthwise and scooped out | ||
| 2 | cups | Chopped romaine lettuce |
Directions
In large bowl, combine peppers, onions, tomatoes, and capers. Season with salt and pepper, then add cheese and ¼ cup dressing. Toss well. Pile into loaf. Top with lettuce. Drizzle with remaining dressing. Replace top half of loaf. Wrap tightly in plastic wrap and let stand 30 minutes.
Makes 6 to 8 servings.
