Fatfree bran muffins

Yield: 12 Servings

Measure Ingredient
2 cups Whole wheat flour
2 cups Wheat bran
1 teaspoon Baking soda
½ teaspoon Baking powder
2 \N Egg whites
2 cups Skim milk
½ cup Apple juice concentrate
½ teaspoon Cinnamon
⅛ teaspoon Cloves
⅛ teaspoon Nutmeg
½ teaspoon Vanilla

Sift together all dry ingredients except bran. Add bran, milk and juice concentrate. Add stiff egg whites Divide batter among 12 muffin cups (lined with muffin papers). Bake 20 minutes, or until muffins are springy to the touch and lightly browned, at 400 degrees (preheat the oven).
