Fatfree fruit muffins

Ingredients

cupFlour; white or wholewheat
1cupOat bran or oatmeal
teaspoonCinnamon
1tablespoonBaking powder
½cupEvaporated skim milk
½cupDefrosted apple juice concentrate
1Egg -or-
2Egg whites or equivilent
1Ripe banana; mashed -or-
½cupApplesauce
1cupFruit; berries, diced peaches, pears; apples, raisins, whatever
½cupNuts; if you like

Directions

Mix dry ingredients. Stir together wet ingredients except 1 cup fruit.

Blend together wet and dry, add fruit and nuts. Bake 425 for 17 minutes.
