Fatfree fruit muffins

Yield: 12 Servings

Measure Ingredient
1¼ cup Flour; white or wholewheat
1 cup Oat bran or oatmeal
1¼ teaspoon Cinnamon
1 tablespoon Baking powder
½ cup Evaporated skim milk
½ cup Defrosted apple juice concentrate
1 \N Egg -or-
2 \N Egg whites or equivilent
1 \N Ripe banana; mashed -or-
½ cup Applesauce
1 cup Fruit; berries, diced peaches, pears; apples, raisins, whatever
½ cup Nuts; if you like

Mix dry ingredients. Stir together wet ingredients except 1 cup fruit.

Blend together wet and dry, add fruit and nuts. Bake 425 for 17 minutes.
