Cucumber salad (young)

Yield: 4 Servings

Measure Ingredient
2 \N Cucumbers, peeled, halved & seeded
\N \N Juice of 1 lime
1½ teaspoon Sugar
¼ cup Soy sauce
½ small Red onion, thinly sliced
1 small Fresh red chili pepper, thinly sliced
1 small Fresh green chili pepper, thinly sliced
2 \N Plum tomatoes, sliced
\N \N Whole chili peppers
\N \N Cilantro sprigs

Cut cucumber halves into 2" long sections. Cut each section into ¼" thick strips. Place in a bowl. Add the lime juice, sugar & soy sauce. Toss gently until well combined. Add onions, chilis & tomatoes & toss gently until well combined. Garnish with the whole chilies & cilantro sprigs.
