Cucumber condiment

Ingredients

1 | Medium cucumber, julienned | |
2 | tablespoons | White vinegar |
1 | teaspoon | Sugar |
1 | teaspoon | Salt |
½ | Onion, peeled and sliced | |
12 | Fresh red chili peppers slices, paper thin slices | |
½ | cup | Dry roasted peanuts, chopped |
¼ | teaspoon | White pepper, ground |
Directions
In a deep bowl stir vinegar, sugar, salt and white pepper until well blended. Add the remaining ingredients, except peanuts, and toss with the marinade. Top with peanuts right before serving. Serve at once or cover and chill for no longer than 2 hours before serving.
NOTES : This is a condiment used with many Thai dishes. It is flavorful cool and refreshing. We have Canadian friends who also add green mango to this which turns it into a wonderful side salad.
