Fresh cucumber relish

Yield: 1 Servings

Measure Ingredient
1 cup White vinegar
1¼ cup Water
¾ cup Sugar
1 tablespoon Salt

Mix all together until sugar is dissolved. Chill. Peel and slice, paper thin, as many cucumbers as liquid will cover or maybe a little more. Allow to stand in refrigerator ½ hour or longer. One recipe suggests that cukes will wilt if kept too long before serving. I like it wilted! Serve with slotted spoon as salad or relish.
