Country chicken sausage

Ingredients

| 2 | Feet small hog or sheep casings | |
| 2 | pounds | Chicken meat-15%fat | 
| 1 | teaspoon | Salt, or to taste | 
| 1 | teaspoon | Pepper | 
| ½ | teaspoon | Sage | 
| ½ | teaspoon | Ground thyme | 
| ½ | teaspoon | Ground ginger | 
| ½ | teaspoon | Summer savory | 
| ½ | teaspoon | Cayenne (optional) | 
Directions
Prepare casings. Grind the chicken through the fine disk; mix with remaining ingredients. Grind again and stuff. Twist off into 2-3" links. To cook, saute in oil until evenly browned and cooked through.
