Cinnamon-raisin muffins

½ | cup | Regular, Quick or Instant CREAM OF WHEAT Cereal |
½ | cup | Sugar |
1 | tablespoon | Baking powder |
2 | teaspoons | Ground cinnamon |
1 | cup | Milk |
1 | Egg, lightly beaten | |
2 | tablespoons | FLEISCHMANN'S Margarine, melted |
11 | teaspoons | Vanilla extract |
1 | cup | California Raisins |
2 | tablespoons | Fruit juice, any flavor |
Directions
In medium bowl, combine flour, cereal, ¼ cup sugar, baking powder and cinnamon; set aside.
In small bowl, combine milk, egg, margarine and vanilla; stir into dry ingredients just until moistened. Stir in raisins. Spoon mixture evenly into 12 greased 2½" muffin-pan cups. Bake at 400'F. 18-20 minutes or until toothpick inserted in center comes out clean. Remove from pan; brush tops of muffins with fruit juice and roll in remaining sugar. Serve warm.
