Cinnamon-raisin muffins

½cupRegular, Quick or Instant CREAM OF WHEAT Cereal
½cupSugar
1tablespoonBaking powder
2teaspoonsGround cinnamon
1cupMilk
1Egg, lightly beaten
2tablespoonsFLEISCHMANN'S Margarine, melted
11teaspoonsVanilla extract
1cupCalifornia Raisins
2tablespoonsFruit juice, any flavor

Directions

In medium bowl, combine flour, cereal, ¼ cup sugar, baking powder and cinnamon; set aside.

In small bowl, combine milk, egg, margarine and vanilla; stir into dry ingredients just until moistened. Stir in raisins. Spoon mixture evenly into 12 greased 2½" muffin-pan cups. Bake at 400'F. 18-20 minutes or until toothpick inserted in center comes out clean. Remove from pan; brush tops of muffins with fruit juice and roll in remaining sugar. Serve warm.
