Cinnamon-raisin muffins

Yield: 12 muffins

Measure Ingredient
11¼ cup All-purpose flour
½ cup Regular, Quick or Instant CREAM OF WHEAT Cereal
½ cup Sugar
1 tablespoon Baking powder
2 teaspoons Ground cinnamon
1 cup Milk
1 Egg, lightly beaten
2 tablespoons FLEISCHMANN'S Margarine, melted
11 teaspoons Vanilla extract
1 cup California Raisins
2 tablespoons Fruit juice, any flavor

In medium bowl, combine flour, cereal, ¼ cup sugar, baking powder and cinnamon; set aside.

In small bowl, combine milk, egg, margarine and vanilla; stir into dry ingredients just until moistened. Stir in raisins. Spoon mixture evenly into 12 greased 2½" muffin-pan cups. Bake at 400'F. 18-20 minutes or until toothpick inserted in center comes out clean. Remove from pan; brush tops of muffins with fruit juice and roll in remaining sugar. Serve warm.
