Yield: 12 muffins
|11¼ cup||All-purpose flour|
|½ cup||Regular, Quick or Instant CREAM OF WHEAT Cereal|
|1 tablespoon||Baking powder|
|2 teaspoons||Ground cinnamon|
|1 \N||Egg, lightly beaten|
|2 tablespoons||FLEISCHMANN'S Margarine, melted|
|11 teaspoons||Vanilla extract|
|1 cup||California Raisins|
|2 tablespoons||Fruit juice, any flavor|
In medium bowl, combine flour, cereal, ¼ cup sugar, baking powder and cinnamon; set aside.
In small bowl, combine milk, egg, margarine and vanilla; stir into dry ingredients just until moistened. Stir in raisins. Spoon mixture evenly into 12 greased 2½" muffin-pan cups. Bake at 400'F. 18-20 minutes or until toothpick inserted in center comes out clean. Remove from pan; brush tops of muffins with fruit juice and roll in remaining sugar. Serve warm.
