Yield: 1 Servings
|8 \N||Carrots, peeled (up to 10)|
|1 cup||Raisins, or more to taste|
|½ cup||Orange juice|
|\N \N||Splash of balsamic vinegar, or more to taste|
|1 can||Cubed pineapple, with some juice|
|½ cup||Shredded apple (optional) (up to 3/4)|
Using food processor if handy, grate carrots. Mix with all other ingredients, including food processed apple if desired, and chill. Very refreshing and healthy. I have seen this made with fat-free mayo but not really necessary since the orange juice/vinegar acts as a great dressing.
