Carrot/raisin salad

Ingredients

| 8 | Carrots, peeled (up to 10) | |
| 1 | cup | Raisins, or more to taste |
| ½ | cup | Orange juice |
| Splash of balsamic vinegar, or more to taste | ||
| 1 | can | Cubed pineapple, with some juice |
| ½ | cup | Shredded apple (optional) (up to 3/4) |
Directions
Using food processor if handy, grate carrots. Mix with all other ingredients, including food processed apple if desired, and chill. Very refreshing and healthy. I have seen this made with fat-free mayo but not really necessary since the orange juice/vinegar acts as a great dressing.
