Yield: 1 Servings
|3 cups||Cooked rice|
|2 tablespoons||Chopped parsley|
|Salt and pepper to taste|
|1 tablespoon||Soft butter|
|5 pounds||Chicken or duck|
Combine all ingredients except onion, giblets and duck. Boil onion and giblets until almost tender; grind in food grinder. Add to rice mixture and stir. Pack chicken or duck with stuffing as roast as usual. Left-over stuffing can be baked in a buttered casserole.
