3cupsCooked rice -- cooled

1mediumCucumber -- seeded/chopped
1smallRed onion -- chopped

Directions

In a small bowl, whisk together oil, vinegar, basil, salt and pepper.

Add rice, tomatoes, cucumber and onion; toss. Serve chilled. Yield: 6 servings
