Basil tomato salad

| 3 | cups | Cooked rice -- cooled |
| 2 | mediums | Tomatoes -- chopped |
| 1 | medium | Cucumber -- seeded/chopped |
| 1 | small | Red onion -- chopped |
Directions
In a small bowl, whisk together oil, vinegar, basil, salt and pepper.
Add rice, tomatoes, cucumber and onion; toss. Serve chilled. Yield: 6 servings
