Baked turkey salad

Ingredients

2tablespoonsOlive oil
1cupCelery; thinly sliced
½cupOnion; chopped
½cupMayonnaise type salad dressing
½cupLight sour cream
1tablespoonLemon juice
½poundsCooked turkey breast; cut into cubes
½cupSlivered almonds; toasted
6ouncesMushrooms; sliced
¼cupSeasoned breadcrumbs

Directions

1. Preheat oven to 325°F.

2. Heat oil in a large heavy nonstick skillet over medium heat. Add celery and onion and sauté 4 minutes, or until tender.

3. Remove from heat and stir in next 3 ingredients and salt and pepper to taste until well blended.

4. Add turkey, almonds and mushrooms. Toss to coat well. Transfer to an ovenproof casserole.

5. Sprinkle with breadcrumbs and bake 25-30 minutes until bubbly.
