German turkey salad

Yield: 6 servings

Measure Ingredient
1 pounds Turkey, thinly sliced into strips
3 eaches Apples, peeled and cored
3 larges Gherkin pickles
10 eaches Cooked, cooled potatoes
\N \N Lemon juice
\N \N Sugar
1 cup Mayonnaise
2 teaspoons Duesseldorf mustard
2 teaspoons Tomato paste
2 tablespoons Sour cream

Slice the apples, pickles and potatoes into strips and add turkey.

Season with lemon juice and a little sugar. Toss to mix well.

Meanwhile, add mayonnaise, mustard, tomato paste and sour cream together. Mix together and chill for at least 1 hour. Garnish with tomato wedges and quartered hardboiled eggs. Serves 6. Origin: Sharon Stevens. Shared by: Sharon Stevens, Jan/95.
