Winter turkey salad ^

Yield: 4 servings

Measure Ingredient
2 cups Chopped cooked turkey
¼ cup Sliced celery
2 tablespoons Finely chopped pimentos
2 tablespoons Capers
1 tablespoon Finely chopped scallions
1 tablespoon Finely chopped parsley
½ cup Mayonnaise
1 teaspoon Dijon mustard
\N \N Salt and pepper to taste
3 drops Tabasco sauce
½ \N Lemon, juice of
\N \N Lettuce leaves

Toss turkey, celery, pimento, capers, scallion and parsley together.

Combine mayonnaise, mustard, salt, pepper and Tabasco; stir lightly into turkey mixture. Sprinkle with lemon juice and toss lightly. To serve, arrange lettuce leaves in slald bowl and place turkey salad in center.
