Baked cheese grits - country living

Yield: 12 servings

Measure Ingredient
3 cups Cooked grits
6 ounces (1 1/2 C) shredded Cheddar cheese
2 larges Eggs, beaten
1½ cup Evaporated milk
2 tablespoons Butter, melted
½ teaspoon Salt
¼ teaspoon Paprika
⅛ teaspoon Ground red pepper

1. Heat oven to 375'F. Grease twelve 4- oz ramekins or twelve 3-inch muffin-pan cups. In large bowl, stir together all ingredients until mixed. Divide mixture evenly among ramekins.

2. Bake 25 to 30 minutes or just until firm. Cool grits in ramekins 10 minutes. To serve, invert ramekins onto serving plates. (If using muffin pan, invert pan onto aluminum foil; transfer Baked Cheese Grits to serving plates).
