Baked swiss grits

Yield: 8 servings

Measure Ingredient
4 cups Milk
½ cup Unsalted butter, in pieces
1 cup Grits
1 teaspoon Salt
⅛ teaspoon Pepper
4 ounces Swiss cheese, shredded
1½ ounce Parmesan cheese

Preheat oven to 350 degrees. Bring milk to boil. Add butter and stir to melt. Gradually blend in grits, stirring constantly. Remove grits from heat and add salt, pepper and cheeses. Beat with electric mixer for 5 minutes. Pour mixture into greased 1½ quart casserole and bake for 1 hour. Serves 8. Nutritional analysis per serving: 295 calories, 19 grams fat, 59 mg cholesterol, 578 mg sodium, 58 percent of calories from fat.
