Cilantro-mint relish

¼ cup Minced red onion
1 tablespoon Minced ginger

¼ teaspoon Pepper
¼ cup Minced mint
1 bunch (small) cilantro minced
1 teaspoon Sugar
1 teaspoon Salt
2 tablespoons Water
2 \N Limes, juice of

Combine all ingredients and refrigerate at least 2 hours. This is very good served with grilled salmon.
