Angel-hair pasta with sun-dried tomatoes

Ingredients

1poundsOil-packed sun-dried tomatoes; drained
2cupsBoiling water
3Cloves garlic
¼teaspoonSalt
¼teaspoonGround hot red pepper; (cayenne) (up to 1/2)
1poundsDried angel-hair pasta

Directions

1. Remove one-quarter of tomatoes and finely slice. Combine remaining tomatoes, boiling water, garlic, salt and hot red pepper in blender. Whirl until smooth, scraping down sides of blender with rubber spatula as needed.

2. Cook pasta according to package directions. Drain well. Toss pasta with tomato puree and sliced tomatoes in large bowl.

Makes 8 appetizer servings.
