495174 flounder roll-ups with salsa

Yield: 6 servings

Measure Ingredient
1½ pounds Flounder or sole fillets
1 cup Diced vine-ripe tomatoes or oz. can stewed tomatoes
6 tablespoons Shredded Monterey Jack cheese
4 tablespoons Minced onion
1 Jalapeno pepper, chopped
2 tablespoons Chopped fresh cilantro leaves
1 Clove garlic, minced
1 teaspoon Ground cumin Pinch of fresh or dried oregano Lemon pepper to taste
1 cup Plain tomato sauce

Flatten fish fillets. Combine remaining ingredients, except tomato sauce, and put some of mixture on top of each fillet. Roll fillets, then arrange seam side down in non-stick baking pan sprayed with cooking spray. Pour on tomato sauce (and sprinkle with additional herbs, if desired). Bake uncovered in preheated 350 degree oven for 20 to 25 minutes. Makes 6 servings, 145 calories each.
