Ingredients

1cupDiced vine-ripe tomatoes or oz. can stewed tomatoes
6tablespoonsShredded Monterey Jack cheese
4tablespoonsMinced onion
1Jalapeno pepper, chopped
2tablespoonsChopped fresh cilantro leaves
1Clove garlic, minced
1teaspoonGround cumin Pinch of fresh or dried oregano Lemon pepper to taste
1cupPlain tomato sauce

Directions

Flatten fish fillets. Combine remaining ingredients, except tomato sauce, and put some of mixture on top of each fillet. Roll fillets, then arrange seam side down in non-stick baking pan sprayed with cooking spray. Pour on tomato sauce (and sprinkle with additional herbs, if desired). Bake uncovered in preheated 350 degree oven for 20 to 25 minutes. Makes 6 servings, 145 calories each.
