Waimea salad

Yield: 8 -10 servin

Measure Ingredient
2 cans Pineapple chunks (20 oz can)
2 cans Oranges, drained (11 oz can)
4 cups Strawberries, halved
3 tablespoons Lime juice, fresh
3 tablespoons Lemon juice, fresh
3 tablespoons Vegetable oil
1 teaspoon Mint
½ teaspoon Curry powder
¼ teaspoon Salt
\N \N Crisp salad greens
4 \N Bananas, sliced

Drain pineapple, reserve ¾ cup juice. Chill pineapple, orange, and strwberries. Blend reserved pineapple juice, lime juice, oil, mint, curry powder, and salt in a small bowl and refrigerate covered. When ready to serve salad, arrange crisp greens on large serving platter.

Add bananas to other fruits. Attractively arrange fruits on greens.
