Veal burgers

Yield: 6 servings

Measure Ingredient
¾ cup Minced onions
6 tablespoons Fat
4 slices White bread
1½ pounds Ground veal
1½ teaspoon Salt
¼ teaspoon Pepper
3 \N Eggs -- beaten
¾ cup Matzo or cracker meal

Brown the onions in half the fat. Wet the bread and mash until smooth. Mix the browned onions, bread, veal, salt, pepper and 2 eggs.

Shape into hamburgers. Dip in the remaining beaten egg and then in the meal. Heat the remaining fat in a skillet. Cook burgers over low heat until browned on both sides. S Recipe By : Jennie Grossinger - "The Art Of Jewish
