| ¾ | cup | Onion; chopped |
| 1¼ | cup | Celery; chopped (and leaves) |
| ¼ | cup | Parsley; chopped |
| 4 | Eggs | |
| 10 | ounces | Spinach, chopped; cooked according to pkg. direction |
| 1 | cup | Cheese, Parmesan; grated |
| 8 | ounces | Stuffing mix |
| ½ | teaspoon | Sage, rubbed |
| 1 | Garlic clove; chopped | |
| 1 | cup | Turkey broth |
| 2 | tablespoons | Oil, olive |
| 1 | tablespoon | Butter |
Directions
Cook sausage until cooked through; break apart and add ground veal and pork; cover and cook 15 minutes. Add onion, celery, and parsley; cook, covered, 20minutes longer. Stir to mix thoroughly.
Meanwhile, beat eggs lightly; add spinach and Parmesan cheese. Place stuffing mix in bowl; add meat mixture, egg mixture, sage, garlic, broth, olive oil, and butter. Mix carefully with fork. Spinach may be onitted and additional celery added.
Yield: dressing for a 15 to 20 pound turkey.
