cupCelery; chopped (and leaves)
¼cupParsley; chopped
4Eggs
10ouncesSpinach, chopped; cooked according to pkg. direction
1cupCheese, Parmesan; grated
8ouncesStuffing mix
½teaspoonSage, rubbed
1Garlic clove; chopped
1cupTurkey broth
2tablespoonsOil, olive
1tablespoonButter

Directions

Cook sausage until cooked through; break apart and add ground veal and pork; cover and cook 15 minutes. Add onion, celery, and parsley; cook, covered, 20minutes longer. Stir to mix thoroughly.

Meanwhile, beat eggs lightly; add spinach and Parmesan cheese. Place stuffing mix in bowl; add meat mixture, egg mixture, sage, garlic, broth, olive oil, and butter. Mix carefully with fork. Spinach may be onitted and additional celery added.

Yield: dressing for a 15 to 20 pound turkey.
