Tuna & rice creole

Measure Ingredient
2 tablespoons Butter or bacon fat
¾ cup Rice
½ cup Chopped green pepper
½ cup Chopped onion
1 \N Garlic clove
1 can VEG-ALL Mixed Vegetables (16 oz)
1 can Stewed tomatoes (16 oz)
1 can Chicken broth (12 oz)
1 can Tuna, flaked (12.5 oz)
½ cup Shredded cheddar cheese

1. Heat fat in skillet. Add rice, green pepper, onion and garlic; cook 5 minutes.

2. Drain VEG-ALL.

3. Combine rice with stewed tomatoes and chicken broth. Bring to boil, cover and simmer until rice is cooked, about 25 minutes.

4. Stir in tuna and vegetables; sprinkle cheese over top. Heatt until cheese is melted.
