Tropical bran bread

Ingredients

| 1 | cup | Fiber one cereal, crushed |
| 1 | cup | Canned pineapple juice |
| 1 | teaspoon | Vanilla |
| 1¾ | cup | Flour |
| ¾ | cup | Sugar |
| ⅓ | cup | Butter |
| 2 | teaspoons | Baking powder |
| ½ | teaspoon | Salt |
| ½ | teaspoon | Baking soda |
| 2 | Eggs | |
Directions
Heat oven to 350°. Grease bottom only of loaf pan. Mix cereal, juice and vanilla in large bowl; let stand 10 minutes. Stir in remaining ingredients.
Pour into pan. Bake 55-60 minutes or until toothpick comes our clean. Cool 10 minutes, loosen sides from pan. Remove from pan. Cool completely on rack before slicing. Store tightly wrapped in refrigerator up to 1 week.
Variation: Stir in ½ cup raisin with the ingredients. Add ½ cup finely chopped walnuts.
