Cooking spray
1cupDiced yellow squash
1can(14oz) diced tomatoes or 2 cups fresh tomatoes; diced
2cansTomato sauce
1mediumTomato; chopped
1teaspoonItalian spice
6Fresh basil leaves; chopped

Directions

Coat a skillet lightly with cooking spray and saute onion and pepper. Add reminder of ingredients and simmer for as long as possible.

Serve over Lentil Rice Burgers or potatoes, or pasta, or whatever you wish.
